Smothered Chicken with Broccoli

Prep Time: 2-3 minutes
Cook Time: 8-10 minutes; if rice cook time is included then approximately 20
minutes
Yield: 4 servings (about 1-1/2 cups sauce)
Ingredients:
*4 skinless boneless chicken breast halves
*2 teaspoons vegetable oil
*2 (10-1/2 oz.) cans Store Brand Condensed (or 98% Fat Free) Cream
of Chicken Soup
*1/2 cup milk
*1/4 teaspoon nutmeg
*1 package (16 oz.) frozen broccoli spears
Directions:
In skillet, brown chicken in oil. Remove chicken. Add soup, milk
and nutmeg. Add chicken to pan. Cover, simmer on low until chicken
is cooked. Meanwhile, cook broccoli according to package directions
and divide broccoli among serving plates. Place chicken breast
on top and serve over steamed rice. Garnish with chopped parsley.
