Lemon Rice

Yield: 4 servings
Ingredients:
*3 cups Chicken broth
*2 cups uncooked long grain rice
*2 tsp. minced garlic
*2 Tbs. lemon juice
*¼ tsp. salt
*1 ½ tsp.dried dill
*2 Tbs. butter or margarine
*Optional: zest of one lemon
Directions:
In a 2 quart saucepan, combine broth, rice, garlic, lemon juice
and salt, stirring well. Bring to a boil over medium high heat,
cover, lower heat to medium and simmer about 15 minutes until liquid
is absorbed. Add dill, butter, and if desired, lemon zest. Let
sit 5 minutes, fluff with a fork, mixing well and serve hot.
