Pecan Pork Cranberry Orange Sauce
Difficulty: Moderate
Prep Time: 8-10 minutes
Cook Time: 12-15 minutes
Yield: 4 servings
Ingredients:
*1 egg, slightly beaten
*1 tablespoon water
*1/2 cup seasoned dry breadcrumbs
*1/2 cup chopped toasted pecans
*1 pound pork loin, sliced 3/4-inch thick (or pork tenderloin)
*2 tablespoons vegetable oil
*1 can (10-1/2 ounces) Store Brand Mushroom Gravy
*3/4 cup whole berry cranberry sauce
*1/4 cup orange marmalade
*1/8 teaspoon allspice
Directions:
In shallow dish, beat egg and water. Combine breadcrumbs and pecans
on waxed paper. Dip pork in egg, then in crumb mixture. Slowly
cook on both sides in oil, adding more oil if necessary, until
pork is cooked through, about 6 to 8 minutes; remove and keep warm.
In same skillet, combine gravy, cranberry, marmalade and allspice;
heat until bubbly and jelly is melted. Serve cranberry sauce over
pork. Garnish with toasted pecan halves, if desired.
