Mushroom Rice Pilaf

Yield: 4-6 servings
Ingredients:
*¼ cup margarine or butter
*1 (7 oz.) can drained, sliced mushrooms
*½ cup chopped red onions
*2 cups rice
*3 cups Chicken broth
*1 Tbs. dried parsley
*½ tsp. salt
Directions:
In a 2 quart saucepan over medium high heat, melt margarine. Add
mushrooms and red onion, cook 1 minute, stirring often. Add rice
and stir to coat with margarine. Add broth, parsley and salt. Bring
mixture to a boil, cover, lower heat to medium and simmer about
18 minutes, until all the liquid is absorbed. Remove saucepan from
heat and let rice sit for 5 minutes, fluff with a fork and serve
hot.
